My husband created a marinade this was inspired from, and it’s not stuff I would have initially put together, but it’s really good! I knew I had to share it with everyone. This could also work as a marinade on chicken, or on other cuts of pork.

Cook Time: 15-20 mins

Serves 4

 

16 oz pork chops (two 8 oz chops; 1-1 ½” thick)

1 tbsp grain mustard

2 tbsp yellow mustard

juice of 1 lime

1 tbsp balsamic vinegar

Kosher salt and pepper

 

Combine grain mustard, yellow mustard, lime juice, and balsamic vinegar in a dish to create a marinade. Add salt and pepper each side of the pork chops. Put the marinade in a re-sealable plastic bag and add the pork chops, massaging the marinade into the chops and making sure they are completely coated. Marinade for at least 10 mins. Grill the pork chops on medium-high heat for 8-10 mins per side until they are cooked well done (or medium-well if you are comfortable with that and have high quality meat; we choose to generally cook pork well done). Note: if you have thinner or thicker cut pork chops, adjust cooking times accordingly. Juices should run clear for well done.
