When I was a kid in the 1980’s, one of the things my mom made me and my sister and brother was little pizzas made on English muffins.  We always had English muffins in the house, and of course what kid doesn’t love pizza?  I wish I could say my tastes have grown up completely to think this idea is juvenile, but now that I’m a mom, I have started thinking about ways to recreate this little gem of an idea my mom had, even for myself.

The version I’m presenting is a gluten-free vegan version of what my mom made for us, but as adults, or for kids with more ambitious palates than my kids, feel free to add as many toppings as you’d like!

 

English Muffin Vegan Pizzas

Serves 1

Cook time: 5-7 mins

 

Ingredients:

1 gluten-free English muffin (I prefer Enjoy Life’s brown rice version)

2 tsp pizza sauce/pasta sauce/tomato sauce (whatever you have in the house; pizza sauce will make it the most pizza-like, but any of these choices will work!)

2 oz (or to your liking) of vegan mozzarella cheese (Daiya, Miyoko’s, or similar)

dash of dried oregano

dash of garlic powder

 

Directions:

If the English muffin is frozen, heat it in the microwave for about 1 minute until it is warm.  Cut it in half, and then add the sauce, cheese, and dash of oregano and garlic powder (these last two are optional for kids if you think yours won’t eat it with those things on it, but as an adult, I feel like they’re non-negotiables to make the vegan cheese especially more “pizza like”; real life, my kids seem to shun any green flecks on pizza…sigh).  Place on a small baking sheet and put in a toaster oven (ideal) or regular oven, on the broil setting for about 5 minutes, until the cheese melts.  Vegan cheese doesn’t tend to brown very easily, so you want it to at least melt.  The more toppings you put on the pizza, or the more cheese, the more time it will take to melt the cheese, so keep this in mind.

This recipe is fun for kids to make along with you.  They can scoop on their own sauce, sprinkle the cheese, or add any other toppings.  When kids get involved with making food, they tend to eat more of it…or at least try it.  😉  I hope you and your kids love this as much as I did when I was little, and as much as my little ones are learning to love it!
