Eggs are good for helping to build kidney qi according to Chinese Medicine, and so if you’re feeling tired or run down, or you’ve been “burning the candle at both ends” lately, try out these herby scrambled eggs. They’re my favorite way to eat scrambled eggs and the fresh herbs bring brightness to the heaviness of the eggs.

Serves 1

Ingredients:

2 pasture-raised large eggs

3-4 chives (can substitute garlic chives or green onions/scallions)

3-4 sweet basil leaves

4-5 leaves of parsley

1 tsp extra-virgin olive oil (can substitute ghee or avocado oil if preferred)

1/8 tsp of garlic powder

salt and pepper to taste

Instructions:

In a bowl, crack the eggs and whisk them thoroughly. Finely chop all of the herbs. Add the herbs, garlic powder, salt, and pepper (if preferred you can add salt and pepper at the end) to the beaten eggs and stir.

Heat a skillet on medium heat, and add the olive oil, shifting the pan so it coats the surface. Add the egg mixture. Move the eggs around in the pan every few seconds, until mostly cooked through (1-2 mins). Turn the heat off and allow the eggs to finish cooking through. Plate and serve with fresh fruit, such as the Summer Berry Fruit Salad, and/or Sautéed Mixed Greens for a tasty breakfast!
