Who doesn’t love a pretty and dramatic dish for breakfast or brunch? This papaya bowl is a stunner and full of healthy vitamins and minerals to start your day off right.

Ingredients:

1/2 papaya, cut lengthwise and seeds removed

5 oz plant-based plain yogurt (such as Culina)

10-12 blueberries

1/2 banana, sliced into coins

2 Brazil nuts (or 4-5 hazelnuts)

1/2 tsp honey (or date syrup or maple syrup if vegan)

Dash of Ceylon cinnamon

Instructions:

Chop the Brazil nuts into small pieces. Place the yogurt in the cavity of the papaya where the seeds were removed, and top with blueberries, sliced bananas, and Brazil nuts. Drizzle honey/syrup over the yogurt and sprinkle the cinnamon on top. You can garnish with fresh mint (optional).

Note: Brazil nuts contain a high amount of selenium. Eating 1-2 gives you all the selenium you need for the day. Eating more than 3 a day can cause selenium poisoning, so restrict your intake to 1-2 a day.
