Chocolate covered strawberries are a classic dessert fit for any special occasion. I use vegan chocolate to make them dairy-free and still delicious!
Makes about 16 strawberries
Serves 8
Ingredients:
1 lb organic strawberries
1 cup vegan semi-sweet or dark chocolate mini chips (I used Enjoy Life brand; can use regular or chop up a chocolate bar if preferred)
1 cup vegan white chocolate mini chips (I used Enjoy Life brand)
Toppings of your choice (I used crushed freeze-dried strawberries, mini chocolate-chips, and organic coconut flakes, but chopped nuts or sprinkles are also great)
Instructions:
Wash the organic strawberries, and then thoroughly dry them one-by-one. If they are not dried well, the chocolate will slide off. After they are dried, using a double boiler, heat the semi-sweet chocolate chips until they are smooth, and then pour the melted chocolate into a bowl that is wide enough to allow you to easily dip the strawberries. Repeat the process for the white chocolate. Set up your toppings into small bowls to make it easy to grab, and line a tray with parchment paper.
Dip the strawberries into one of the bowls of melted chocolate and allow the excess chocolate to run off. Place the strawberry on the parchment lined tray, and repeat until all of the strawberries are coated. While the chocolate is still wet, add the toppings. You can either drizzle the toppings (including chocolate) or dip the strawberries in the toppings directly. If any of the chocolate hardens before you have decorated it, then just redip it and add the toppings. Repeat until you have decorated all of the strawberries to your liking.
Place the tray in the fridge for about 30 minutes until they are fully hardened. Plate and serve. Enjoy!
