Vegan “meats” have come a long way since I was a vegetarian back in the 90s. These new mushroom-based Meati Foods brand carne asada “steaks” are my favorite so far, and are perfect when you’re craving something lighter, or wanting to impress a vegan guest.

Ingredients:

6-8 large lettuce leaves, ideally green leaf lettuce (butter lettuce can work, though smaller, or romaine lettuce)

2 Meati Foods Carne Asada vegan “steaks”

2 tbsp diced red onion

2 medium to large avocados, diced

1 lime

1 tbsp chopped cilantro (or 3-4 leaves per taco if you prefer to have them whole, as shown)

1 tsp avocado oil (or other neutral oil)

Hot sauce or Sweet & Spicy Aioli to taste (optional)

Instructions:

Cut the lime in half or into wedges for easy squeezing. Cook the vegan steaks according to the package instructions, adding the avocado oil to the steaks as recommended. Break the steaks up after they begin to cook until they are in thicker chunks. Using the lettuce leaves as taco “shells,” add a scoop of steak (about 1/4-1/3 per steak, depending on how full you want the tacos to be), diced avocado, red onion, cilantro, lime juice, and any sauce to your liking.

Obviously you can forgo the lettuce wraps for heated corn tortillas, but lettuce wraps make for a light and refreshing alternative, especially during the warmer months.
