A simple massaged kale salad is a good staple to have as part of your arsenal, and it creates a base with which you can add all sorts of creative toppings. Avocado adds some healthy fat to this version, and I even threw in some pomegranate seeds for the fall. Nothing stops you from adding in some leftover turkey and roasted butternut squash after the holidays, or some grilled veggies in the summertime.
Prep Time: 5 min
Serves 1
2 oz kale (any variety)
½ lemon
1 tbsp extra-virgin olive oil
¼ tsp kosher salt
½ avocado
pomegranate seeds for decoration (optional)
In a bowl, add the kale, olive oil, salt, and lemon. With your hands, massage the ingredients together until the kale slightly softens and everything is well mixed (about 1 min). Dice the avocado and add to the salad (note: some people choose to add avocado in earlier and smash it into the salad but I don’t). Top with pomegranate seeds and enjoy!
