I don’t know about you, but when the weather gets cooler, and those first snowflakes fall, I’m all about comforting, warming dishes, and making big pots of soups and stews. Here I’ve assembled some of my favorite dishes for you to make to keep you warm all winter long.
Butternut Squash Curry

My Mom’s Potato and Corn Chowder
With natural sweetness from corn, ham, and rice milk, this gluten-free, dairy-free chowder is just what you need on a chilly day. Get the recipe here.
Carrot, Leek, and Potato Soup
This blended soup is thick and filling, and easy to make. It’s one that we go to over and over again in the fall and winter months. For guests eating dairy, a small dollop of sour cream and some chopped chives makes for an impressive presentation. Get the recipe here.
Easy Chili
I am all for easy soup recipes. Most of mine are simple, if you can’t tell. But this one is the easiest of them all if you make it vegan, and not much more challenging if you add meat. My chili is literally all about starting with sauteing some veggies if you want, and then just dumping cans into a pot, plus some spices, cooking for a bit, and you’re done. Sausage, Sweet Potato, and Red Lentil Soup
If I had to choose only one soup to eat the rest of my life, it would be this one or the regular potato version of it. I don’t know what magic entered my life the day I created these soups, but I’ve made them so many times over the years, and they’re always go-back-for-seconds (or thirds for my husband) good.
