This Fried Green Heirloom Tomato Toast reminds me of summers past on the Eastern Shore of Maryland where I grew up. The crunchy texture the blanched almond flour gives to these tomatoes are just the right pairing, and out of all the toasts, this one was my 3 year-old son’s favorite! I see now why fried green tomatoes are so popular, and I can’t wait until next summer to have them a little more often (they’re still in the “occasional” category for me, since they are fried).

Fried Green Heirloom Tomato Toast
Serves 1
Total Time: 12-15 mins

Ingredients:

1 slice gluten-free bread (I used B Free multi-grain sandwich bread)
1 tbsp vegan plain cream cheese (I used Kite Hill)
2 tbsp blanched almond flour
2 slices green heirloom tomato, cut about 1/4″ thick
1 tbsp extra-virgin olive oil
freshly cracked salt and pepper
fresh basil for garnish

Instructions:

Cut the two slices of green heirloom tomato. Place the almond flour in a bowl and dredge both sides of the tomato slices in the flour until well coated. In a frying/sauce pan, pour the olive oil and tilt the pan to cover the surface with the oil, and turn to medium heat. Let the oil heat up and then place the dredged tomatoes in the pan. Cook 4-5 mins per side, turning after they get golden brown. Once both sides are browned, place the tomatoes on a plate lined with a paper towel to soak up any extra oil. Toast the bread to your desired level, and then spread the cream cheese on the toast. Add the two slices of tomato, add the freshly cracked pepper and salt, and top with basil. Enjoy!
