Pitaya is another word for dragonfruit, and typically is the “red” version which is a beautiful, vibrant magenta color. You can find this pre-blended and frozen, as I did here, or you can buy the pitaya whole and blend it ahead of time, place it in ice cube trays or a resealable bag (I love reusable ones like Stasher or similar brands that you can find in most stores now) and freeze it to pop in the blender when you’re ready to make this dish.

Ingredients:

7 oz blended frozen pitaya

1 ripe banana

1/2 cup unsweetened almond milk

1 cup fresh berries or other fruit of your choice

1 tsp chia seeds (optional)

1 tbsp chopped nuts of your choice (pecans, walnuts, almonds, hazelnuts, brazil nuts, macadamia nuts would all work lovely here)

Instructions:

Place the frozen pitaya, banana, and almond milk in a high-speed blender, and blend for a few seconds at medium-high speed (around 8 if using a Vitamix or similar) until smooth. Spoon the mixture into a small bowl. Top with fruit of your choice, such as cut strawberries, blueberries, yellow dragonfruit (slightly sweeter than the red), or kiwi. Add in the chia seeds if using, and chopped nuts. Granola can be a great add-in as well, if you’re eating grains.
