This asparagus is so simple yet seriously awesome. I don’t even love asparagus but I could eat this all day. Not even lying. It’s a great example of how a little tweak can turn a dish into something special! I use organic asparagus, which is often much thinner and cooks faster as a result, but if you can’t find it or you can only find thicker asparagus, it works fine as well. Just increase the cooking time a little to make sure the asparagus softens.

Cook time: 10 mins

Serves 2-3

 

1 tbsp extra virgin olive oil

1 tbsp balsamic vinegar

12 oz organic asparagus

kosher salt and pepper to taste

 

Break or cut off the bottoms of the asparagus, since they are tough. Turn the heat on the stove burner to medium-high heat. In a sauté pan, add the olive oil and asparagus. Saute for about 5 mins to soften the asparagus slightly. Add the balsamic vinegar and sauté another 5 mins or so. The asparagus should be soft and turn slightly brown as it absorbs the balsamic vinegar. Add salt and pepper to taste.
