I invented this version of avocado toast back when it was all the rage about when I created the Cleanse, and I come back to it over and over again for an easy breakfast. In the summertime, my husband and I always arrange to hang out with his best friend, and we indulge in homemade margaritas (maybe I’ll share the recipe one day), and tons of avocados- either his homemade guacamole, or my chunky avocados with lime, kosher salt, and fresh cilantro. We all consume way too many tortilla chips along the way, but every year, we look forward to those couple of gatherings and the laughter that always comes along with it. This toast reminds me of those times, so I always smile when I make it.

Serves 1-2

 

2 pieces gluten-free bread (one of my favorites is Udi’s Gluten-Free Millet-Chia bread)

1 small to medium sized avocado

¼ lime

drizzle of extra-virgin olive oil

kosher salt

 

Toast two pieces of gluten-free bread to your liking. In the meantime, wash the outside of the avocado and cut it in half. Remove the pit. When the toast is done, add ½ of the avocado to each piece of toast. Smash the avocado down to spread over the toast (unless you want to make it look super pretty, in which case you can slice it ahead of time and fan it out and whatever else you want…). Squeeze lime juice from the wedge over the avocado, then drizzle with good quality extra-virgin olive oil and sprinkle with a pinch of kosher salt. Kosher salt gives it the margarita vibe and it is a milder salt, so it is preferred.
