My mom was one of the original cleanse participants when I was piloting it many years ago, and she had incredible results. She became inspired to create several recipes, and this was one of my favorites that she came up with. I mean, who doesn’t love soup? While this one does have ham in it, and ham is great for the spleen, if you’re a vegan, feel free to leave it out, and it would still be a tasty soup.

I remember having to go out and buy tarragon to make this dish; I’d never used it, and it is still an herb I don’t use enough of…but it really does make a difference in this soup. Feel free to substitute another type of plant-based milk in this dish if needed, though the rice milk does give it a natural sweetness that may be lacking if it’s subbed out. Back when I was trying to wean myself off of more processed sugars, rice milk was a way I was able to get that hit of sweetness that I craved, and here it plays well off of the naturally sweet corn and ham.

My Mom’s Potato & Corn Chowder

Prep Time: 5 mins
Cook Time: 35 mins
Serves 6-8
 
½-1 cup of cubed ham
5-6 medium sized red potatoes
2 cans or 1 frozen bag of corn
28 oz chicken broth
2 medium onions, diced
2 tbsp extra virgin olive oil
½ tbsp dried tarragon
1 tbsp gluten free flour
½ cup rice milk (original flavor, unsweetened)
Salt to taste
Pepper to taste
Seasoning Salt to taste/for presentation
Juice of ½ lemon
 
In a Dutch oven or large sauté pan, sauté the onion in the olive oil until translucent, about 5 mins. Add potatoes, broth, corn, tarragon, salt, pepper and seasoning salt.  Cook until the potatoes are fork tender and the chowder has started to thicken, about 20 mins.  In a separate bowl, add the gluten free flour to the rice milk and stir until smooth.  Add a ladle of the chowder to the flour/milk mixture.  Stir until smooth then add the rice milk mixture to the pot.  Cook until thickened, about 10 mins.  Season to taste, and then add the lemon juice and enjoy.

Note: This soup is fairly thin for a chowder. If you want a thicker chowder, you can add more flour mixture, or add a couple more potatoes and blend some of the soup with a hand blender.
