Ok, so Easter may look a little different this year as we all physically distance ourselves from one another…for some this may mean spending the holiday with way fewer people than normal, and for many, it means being alone at a time that is normally one of togetherness and tradition.  I usually host Easter, and so our house will not be filled with parents and relatives, but instead will be just the four of us, plus likely video calls with family.  I’ll also miss out on my what-I’d-hoped-would-be-annual Earth Day and Easter Egg Hunt at my wellness center.  Last year we had a dozen kids or so come and search for Easter Eggs in our center, and then I led them through some fun Earth Day activities.  They had so much fun and I’d hoped to do it again this year; however, I’m thankful that at least I’ll get to do those activities with my own two kids.

 

When it comes to Easter meals, I mix it up a little, plus it’s a potluck usually, so I’m a bit at the mercy of what family wants to bring!  This year, since it’s just us, and since I have to work with the groceries I’ve got (which thankfully more were delivered yesterday after weeks of no available delivery dates at our favorite grocery stores!), the menu will be much more pared down.  I have, however, planned a couple fun baking projects with the kids, including an Easter Bunny cookie kit I bought, and I’ll also be making an Easter Bunny cake, which is a tradition from when I was a kid.  I don’t make one every year because it’s a little labor intensive and the less cake we have in the house, the less angry my husband is at me since I don’t tempt his self-control…but, well, given the circumstances, I felt a bunny cake would make it feel like the extra special day it is, rather than just another regular day.  Of course we have the Easter Egg Hunt planned, which is the kids’ favorite, and I’ve got pretty much everything for their baskets, so we will have those traditions that I’m looking forward to doing, even though I’ll miss the looks on everyone else’s faces as they enjoy watching my two little ones search for the colorful eggs around the yard.

 

This year, we will be having baked salmon, plus my Balsamic Sauteed Asparagus and I haven’t quite decided on the other side yet.  I found some super fun ideas for Easter online this year, and I wanted to share them here with you, as ways to maybe jazz up your day in a totally manageable way, especially if you have kids!

 

How totally cute are these pancakes by @naturallyzuzu made into a bunny, with little blueberry and banana paws and whipped cream tail?!? While I still need some practice to make the perfect pancakes, I’m thinking these may be breakfast on Easter Day, and the kids could decorate their own bunnies!

 

  These homemade plant-based healthier “white chocolate” Reese’s style eggs were so cool when I saw @healthylittlevittles post them a few days ago.  While you’d need an egg shaped mold to make them as pretty as she did, these vegan candies would be pretty fun, no matter what the shape!  I don’t have all the ingredients to make these or else I’d have fun with the kids making these!  Check out her Instagram to get the recipe!

 

  If you have little kids like me, and you’re wanting to do some crafts, Debbie of One Little Project has 40+ Easter craft ideas for kids!  I don’t know about you but having my 3 year old as one of those cotton ball bunnies looks like a pretty funny project!  Check out her post for ideas and then let your kids’ imagination take over!

 

  Martha Stewart posted a recipe for how to naturally dye Easter eggs, so if you didn’t buy natural egg dyes ahead of time, and you don’t want to deal with the yucky stuff in the regular dyes, then maybe you’ll have some of these ingredients around!  I happen to have all of these ingredients…just not necessarily as MUCH as she suggests, so we may try to do a couple small batches.  To be honest though, I think I may only have a couple white eggs right now and the rest are brown…sooooo we may just paint eggs or do something else.  Anyway, if you have white eggs *and* these food ingredients, you can make some pretty eggs!  Check out her post here.

 

I hope you all have a happy Passover and Easter.  For those who like to view services, many churches and Synagogues are broadcasting online so you don’t even have to miss out.  It may not be the same as being there in person, but you are there energetically in spirit.  However you celebrate (including not at all!), I hope you are healthy, safe, and taking time to tend yourselves and your loved ones.
