This toast combines flavorful roasted tomatoes with a creamy, cheesy chive spread that is totally plant-based and addictive. Don’t be surprised if you start spreading this on everything, or if you start roasting tomatoes every day. Eat this toast for breakfast or as part of a lunch- you can thank me later!

Roasted Tomato Toast with Vegan Cheesy Chive Spread
Serves 1
Total Time: 25 mins
Ingredients:
1 slice gluten-free bread (I used B Free brand, multi-grain sandwich loaf)
6-8 cherry or grape tomatoes (I used Kumato, which are my favorite!)
1/8 tsp dried oregano
1/8 tsp dried thyme
1 tsp extra-virgin olive oil
freshly cracked salt & pepper
1 tbsp Vegan Cheesy Chive Spread
4-5 small leaves fresh basil
Instructions:
Note: I cooked the tomatoes in my toaster oven. If you do not have a toaster oven or do not have a sheet insert for it, then you can use a small baking tray at the same settings in the regular oven, and I’d recommend cooking more roasted tomatoes and storing the rest in the fridge in a container, so you are not using all of that heat for just a few tomatoes! If you use the regular oven, you’ll want to preheat it to 425 degrees Farenheit as your first step.
Line a small baking tray for the toaster oven with parchment paper. Cut the tomatoes length-wise in half, and place them on the tray. Drizzle the tomatoes with the olive oil, and add the oregano, thyme, salt, and pepper. Place in the toaster oven at 425 degrees Farenheit for about 20 minutes.
While the tomatoes are cooking, make the Vegan Cheesy Chive Spread. After the tomatoes are done, remove them from the toaster oven, and toast the bread to your desired level. When the toast is done, remove it from the oven, spread the Vegan Cheesy Chive Spread on the toast, then top with tomatoes and basil. Enjoy!
